Erstein est devenue au cours du 20ème siècle la capitale du sucre. Plusieurs générations d'Alsaciens ont vécu dès leur enfance avec les boîtes en carton de sucre avec l'inscription Erstein et le logo d'une Alsacienne en costume traditionnel. Ce livre montre l'évolution des investissements des locaux, mais aussi les rapports avec les ouvriers et leur vie quotidienne, les problèmes liés à la production de betteraves, les difficultés inhérentes à la conjoncture, à la politique fiscale et douanière de l'état au cours de temps.
